本課程以「去殖民飲食研究」為主軸,從全球化時代的餐桌出發,追問:哪些品味被奉為普遍典範、誰有權定義「好吃/健康/文明」、以及這些定義如何與種族、階級、性別、帝國與資本相互纏繞。課程分四個單元,循序拆解飲食研究中被忽略的權力結構與知識政治。單元一「飲食研究的白色神話」以法國料理、米其林與餐飲指南、以及「地中海飲食」等健康論述為切入點,檢視白性如何透過「品味」與「科學中立」的語彙被自然化,並在高端餐飲、營養政策與替代食物運動(在地/有機/小農)中,以色盲的普遍性神話再製排除。單元二「料理東方主義」轉向媒體與消費文化,討論「吃他者」的欲望政治、族裔餐廳與美食專業的階序化機制,並以「食物冒險家」與「文化食物殖民」為核心概念,分析誰能以他者食物換取文化資本、誰被固定在被觀看與被服務的位置。單元三「料理殖民/後殖民主義」聚焦原住民食物主權與殖民接觸地帶的飲食實作,對照秘魯高端料理、泰國飲食的「類殖民」權力,理解「料理資本/美食資本」如何在國家品牌與全球市場中運作。單元四「消化殖民、飲食體制、食物主權」以「胃腸政治」與殖民幽靈為線索,討論食物如何成為治理、資本與種族化差異的戰場,並從大洋洲與太平洋文本思考去殖民的實作路徑。課程將以導讀、討論與案例分析並行,鼓勵學生把理論帶回具體場域:餐廳、指南、媒體、政策與社會運動,建立批判性飲食研究的問題意識與研究工具。
